Today, we’re sharing one of these family favourites straight from Chef Sally’s kitchen, her much-loved Beetroot and Chocolate Brownie recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Sally’s Beetroot and Chocolate Brownies
Ingredients
- 500g raw beetroot OR tinned beets without vinegar
- 100g unsalted butter
- 200g dark chocolate
- 1 tsp vanilla extract
- 250g caster sugar
- 3 eggs
- 100g plain flour
- 25g cocoa powder
Method
- Wear gloves to prevent stained skin. Top, tail and peel beetroot. Roughly chop, place in a bowl with a splash of water. Cover with cling wrap and microwave on high for 12 minutes or until tender.
- Heat over to 180c, grease tray.
- Roughly chop chocolate and cut butter into cubes.
- Drain beetroot, process in a blender with the chocolate, butter and vanilla until smooth and melted.
- Put sugar and eggs into a bowl and beat until pale and foamy, approx 2 minutes. Spoon the beetroot mix in and fold.
- Sift in the flour and cocoa powder and fold.
- Pour mixture into a tin and bake for approx 25 minutes. Cool completely in the tin.
