Pimpama’s Favourite Meal: Chocolate Zucchini Brownies

With a deep passion for creating child-friendly meals packed with goodness, Chef Leesh has perfected dishes that our little learners genuinely look forward to. Curious what’s on the menu?

Today, we’re sharing one of these family favourites straight from Chef Leesh’s kitchen, her much-loved Chocolate Zucchini Brownie recipe. Packed with hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.


Chef Leesh’s Chocolate Zucchini Brownie

Ingredients

  • 112g Vegetable Oil
  • 200g Brown Sugar
  • 1 Tablespoon Vanilla Extract
  • 260g Plain Flour
  • 65g Cocoa powder sifted
  • 1 teaspoon table salt
  • 1 1/2 teaspoon Baking Soda
  • 3 cups grated zucchini (don’t drain)
  • 1 cup choc chips

Method

  1. Line a brownie tin with grease proof paper.
  2. In a large bowl mix oil, sugar and vanilla.
  3. Add flour, cocoa, salt and baking soda, mix until combined.
  4. Fold in zucchini (mix will seem very dry)
  5. All to stand for 5 minutes.
  6. Add chocolate chunks.
  7. Place in your prepared tin and bake for 25-35 minutes or until a toothpick is clean.
  8. Allow to cool in tin.
  9. Cut and enjoy!
