Ingredients:
2 cups self-raising flour
1 cup plain Greek yoghurt (or milk if preferred)
1–2 tablespoons Vegemite (to taste)
1 ½ cups grated cheese (cheddar or tasty cheese works best)
A pinch of salt (optional)
1 tablespoon butter (for spreading, optional)
Method:
- Preheat the oven to 180°C (fan-forced). Line a baking tray with baking paper.
- Make the dough:
- In a large bowl, mix the self-raising flour and yoghurt together until a soft dough forms.
- Lightly flour your bench and knead the dough for about 1–2 minutes until smooth.
- Roll it out:
- Roll the dough into a rectangle about 1 cm thick.
- Add the fillings:
- Spread Vegemite evenly over the dough (use less for a milder taste).
- Sprinkle grated cheese generously over the top.
- Roll and slice:
- Starting from the long side, roll the dough tightly into a log.
- Slice into 12 even pieces and place them flat on the baking tray.
- Bake:
- Bake for 15–20 minutes, or until golden brown and puffed up.
- Serve:
- Let them cool slightly before serving. Perfect warm or cold for morning tea or lunch!
Chef’s Tip: Add a sprinkle of parmesan or a touch of garlic butter before baking for an extra flavour boost. You can also mix in some finely grated carrot or zucchini for hidden veggies!
