Oak on Erin’s Favourite Meal: Apricot Chicken

With a deep passion for creating child-friendly meals packed with goodness, Chef Anna has perfected dishes that our little learners genuinely look forward to. Curious what’s on the menu?

Today, we’re sharing one of these family favourites straight from Chef Anna’s kitchen, her much-loved Apricot Chicken recipe. Packed with protein and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.


Chef Anna’s Apricot Chicken

Ingredients
• 1kg diced Chicken Breasts
• Olive oil
• 1 Litre Apricot Nectar
• 40g French Onion Soup
• 500g Potatoes, cubed
• 200 grams carrots, cubed


Method

  1. Turn oven to 200 degrees Celsius
  2. Drizzle chicken pieces with olive oil
  3. Place in oven safe dish and add potatoes and carrots. Cook until chicken is cooked
  4. Mix Apricot nectar and French onion soup in saucer pot. Heat up until it gets to a thick consistency.
  5. Add the Apricot sauce to the cooked chicken until it gets to the consistency of your choice
  6. Serve with rice.
