Mascot’s Favourite Meal: Butter Chicken

With a deep passion for creating child-friendly meals packed with goodness, Chef Norma has perfected dishes that our little learners genuinely look forward to. Curious what’s on the menu?

Today, we’re sharing one of these family favourites straight from Chef Norma’s kitchen, her much-loved Butter Chicken recipe. Packed with nutrients and hidden protein, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.


Chef Norma’s Butter Chicken

Ingredients

  • Marinade:
  • ½ cup plain yogurt
  • 1tbsp lemon juice
  • 2 tbsp garam masala
  • 1 tbsp ground cumin
  • 1 tbsp cinnamon
  • 2 crushed garlic
  • 1kg chicken fillet diced
  • Curry:
  • 2tbsp veg oil or butter
  • 1 cup tomato paste/puree
  • 1 ½ cup full cream milk or 1 cup heavy cream
  • 1 ½ honey
  • 1 ¼ salt

Method

  1. Marinade ingredients with chicken in a bowl (minimum 3 hours)
  2. Cook chicken: heat the oil in a large frypan. Take the chicken out of the marinade but do not shake off the marinade from the chicken.
  3. Place chicken in the fry pan and cook for around 3 minutes or when chicken turn white all over
  4. Sauce: add tomato paste, milk, honey and salt. Also add any remaining marinade left in bowl. Turn down to low simmer for 20 minutes.
  5. Add your favorites vegetables
  6. Enjoy!
