Today, we’re sharing one of these family favourites straight from Chef Irena’s kitchen, her much-loved Lentil and Sweet Potato Dhal recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Irena’s Lentil and Sweet Potato Dhal
Ingredients
- Rice
- 1 large onion
- 2 carrots
- 2 cans Lentils (480g)
- 2 tablespoons Tomato paste
- 2 large sweet Potato
- 2 cloves Garlic
- 1 litre Veggie Stock
- 1 tablespoon Turmeric Powder
- 1 tablespoon Curry Powder (Vegeta)
- 1 can Coconut Cream
Method
- Add your desired amount of rice to a rice cooker or pot for cooking
- In a large pot, fry the onion and grated carrots.
- Once soft add tomato paste, lentils, and uncooked sweet potato stir for 3 minutes then add garlic, curry powder, turmeric, veggie stock, 1 cup of water, and curry powder to the pot.
- Leave it to boil once the sweet potato is soft add coconut cream and boil on low-medium heat for 5 minutes.
- Serve with cooked rice.
