Geelong’s Favourite Meal: Red Lentil & Vegetable Spaghetti

With a deep passion for creating child-friendly meals packed with goodness, Chef Tina and Chef Ally have perfected dishes that our little learners genuinely look forward to. Curious what’s on the menu?

Today, we’re sharing one of these family favourites straight from Chef Tina and Chef Ally’s kitchen, their much-loved Red Lentil & Vegetable Spaghetti recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.


Chef Tina and Chef Ally’s Red Lentil & Vegetable Spaghetti

Ingredients

  • 1 brown onion diced
  • 2 cloves garlic minced
  • 2tbs vegetable oil
  • 2 medium carrots
  • 1 small zucchini
  • 1 small sweet potato
  • 1 tin 425g crushed tomatoes
  • 1 tin 425g tin tomato soup
  • 1 1/2 cups red lentils
  • 1 tsp basil
  • 1 pkt spagetti
  • 2 1/2- 3 cups maissel chicken stock

Method

  1. cook the pasta by following instructions on the packaging. rinse, drain and set aside while making the sauce
  2. blend carrot, zucchini and sweet potato in food processer roughly chopped
  3. heat the oil in a large saucepan over medium heat. add the onion and garlic, and cook for 5 mins until fragrant and golden in colour
  4. was red lentils in fine strainer until water runs clear
  5. add lentils to pot dried basil, chicken stock and chopped vegetables
  6. stir all ingredients together, cover and bring to light boil, reduce heat to low and simmer for 15mins stirring often.
  7. Add crushed tomatoes and tomato soup and cook for a further 15mins. Stir often to prevent from sticking to the bottom of the pot
  8. Turn off the heat, then with a stick blender, blend till smooth
  9. ladel smooth lentil sauce on top of spagetti and mix through
  10. ENJOY!
