Today, we’re sharing one of these family favourites straight from Chef Glenn’s kitchen, their much-loved Vegan Raspberry Slice recipe. Packed with nutrients, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Glenn’s Vegan Raspberry Slice
Ingredients
- 400g Flour
- 75g Maple Syrup
- 100g Nuttelex
- 1.5 Bananas
- 200g Frozen Raspberrys
- 1 tpsp egg replacer
- 100g Oates
- 400ml rice milk
- 1 tbsp cinnamon
- handful of diced strawberries and a dash of yogurt to serve
Method
- Prepare dry mix: combine flour, oats and egg replacer and mis all for 1 minute. Place in frozen raspberry and mix through.
- Prepare wet mix: combine rice milk, oil and maple syrup. Add water till you get a nice thick consistency if needed.
- Combine dry and wet mixes together till all are combined.
- Bake at 180 oC in a pre-heated oven for 35 to 40 mins.
- Serve cooled with strawberries and yogurt.
