Diamond Creek’s Favourite Meal: Mild Fish Curry

Today, we’re sharing one of these family favourites straight from Chef Shiva, Chef Jazz, and Chef Kashini’s kitchen, their much-loved Mild Fish Curry recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.


Chef Shiva, Chef Jazz, and Chef Kashini’s Mild Fish Curry

Ingredients

  • A gently spiced, creamy curry with tender chunks of fish, served with soft rice – perfect for little ones exploring new flavours.
  • 300g white fish fillets (boneless and skinless – e.g. cod, haddock, or tilapia), cut into small chunks
  • 1 tbsp mild curry powder (choose a blend made for kids or use just a pinch if introducing spices)
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 small carrot, finely grated (adds nutrition and natural sweetness)
  • 200ml coconut milk (full fat for creaminess)
  • 1 tbsp tomato paste (or 2 tbsp finely chopped fresh tomato)
  • 1 tsp olive oil
  • Salt to taste (optional or very light if for toddlers)
  • Fresh coriander, finely chopped (optional)
  • Cooked white or brown rice, to serve

Method

  1. Prep and Sauté: Heat the olive oil in a medium saucepan over low-medium heat.
  2. Add the chopped onion and cook gently for 4–5 minutes until soft and translucent.
  3. Stir in the garlic and curry powder, and cook for another minute until fragrant.
  4. Add Veggies and Sauce: Mix in the grated carrot and tomato paste.
  5. Pour in the coconut milk and stir well to combine.
  6. Let the mixture simmer gently for 5–7 minutes, allowing the flavours to come together.
  7. Cook the Fish: Carefully add the fish chunks to the sauce.
  8. Cover and simmer for 6–8 minutes until the fish is cooked through and flakes easily.
  9. Stir gently so the fish stays in pieces.
  10. Optional: Stir in a sprinkle of fresh coriander.
  11. Taste and adjust seasoning if needed (add just a pinch of salt or leave as is for young children).
  12. Serve: Spoon the mild fish curry over a bed of soft rice.
  13. Serve warm with a smile – it’s mild, creamy, and packed with goodness!
