Today, we’re sharing one of these family favourites straight from Chef Carol’s kitchen, her much-loved Mac and Cheese recipe. Packed with calcium and protein, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Carol’s Mac and Cheese
Ingredients
- 100g butter
- 4 tbsp plain flour
- 2 cups grated cheese
- 4 cups pasta
- diced ham or bacon to your preference
Method
- Cook pasta in boiling water and drain.
- Heat butter in a saucepan over medium heat for 2 minutes or until melted and foaming.
- Add flour. Cook, stirring with a wooden spoon, for 1 minute or until mixture bubbles.
- Remove pan from heat.
- One quarter cup at a time, slowly add the milk.
- Return pan to medium heat. Cook, stirring, for 5 minutes or until sauce thickens.
- Stir in cheese and ham until smooth. Remove pan from heat, stirring constantly to prevent lumps from forming.
