Today, we’re sharing one of these family favourites straight from Chef Norma’s kitchen, their much-loved Chicken Garam Masala recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Norma’s Chicken Garam Masala
Ingredients
- Chicken mince 6kg
- Diced onion 1kg
- Minced garlic 4tbsp
- minced ginger 1tbsp
- Diced carrot 2kg
- Grated zucchini 2kg
- Garam masala 4 tbsp
- crushed tomatoes 1.6kg
- coconut cream 1 litre
- Salt and pepper for seasoning
- (adjust quantities to your family)
Method
- Sauté the Aromatics. Heat oil in a pan over medium heat. Add the onion and garlic, sautéing until golden brown. Stir in the garam masala, salt, and pepper, and cook for another minute until fragrant.
- Cook the Vegetables & Chicken. Add the carrot and zucchini, cooking until softened. Then, add the chicken mince, breaking it apart with a spatula, and sauté until fully cooked and no longer pink.
- Simmer with Tomatoes & Finish with Coconut Cream. Stir in the crushed tomatoes and let the mixture simmer on low heat for 30 minutes, allowing the flavours to meld. Finally, add the coconut cream, stir well, and adjust the seasoning to taste.
