Today, we’re sharing one of these family favourites straight from Chef Darinka’s kitchen, her much-loved Oven-Baked Chicken and Zucchini Meatballs recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Darinka’s Oven-Baked Chicken and Zucchini Meatballs
Ingredients
- 500g Chicken Mince
- 2 Zucchinis Grated
- 2 Tablespoons of Breadcrumbs
- 1 Tablespoon of Olive Oil
- a pinch of salt
Method
- Preheat your oven to 20 degrees celsius (fan-forced) and lightly grease a non stick baking tray.
- Place all of the ingredients into a large bowl and mix well to combine.
- Use a 2 tablespoon to scoop up the chicken mixture and shape into balls. If you find the mixture is still a little ‘wet’ you can add some more breadcrumbs to help it ‘stick’ together and shape into balls.
- Place the chicken balls onto your prepared baking tray, cover with foil and cook for 30 minutes
- remove foil from tray and cook for a further 10mins or until golden.
- Serve on mashed potato topped with Napolitan and Oregano sauce
