Today, we’re sharing one of these family favourites straight from Chef Siena’s kitchen, her much-loved Thai Fish Curry with Rice recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Siena’s Thai Fish Curry with Rice
Ingredients
- 2 cups of rice
- 500gr Hoki fish fillet, cut into portions
- 1 pumpkin, cut in small cubes
- 1 tbsp minced garlic
- 1 minced onion
- 1 tbsp cooking oil
- 1 tbsp Thai curry (red paste)
- 1tbsp fish sauce
- 2 tbsp lemon juice
- ½ tbsp minced ginger
- ½ cup of coconut milk
- ½ cup of water
- ¼ cup of sliced beans
- ¼ cup of peas
Method
- Cook rice in rice-cooker or in a separate pot
- Saute onion, ginger and garlic in oil, cook in low heat till golden
- Add curry paste and cook for about 1 minute until aromatic
- Add Hoki fish and stir the mixture together
- Add pumpkin, coconut milk and water, mix well
- Increase the heat to high until boiled
- Add peas and beans and cook till tender
- Reduce heat to low and add fish sauce and lemon juice
- Simmer for 5 minutes until fish is cooked with aromatic
- Serve over rice
