Aberglasslyn’s Favourite Meal: Minced Beef Stroganoff

With a deep passion for creating child-friendly meals packed with goodness, Chef Beryl has perfected dishes that our little learners genuinely look forward to. Curious what’s on the menu?

Today, we’re sharing one of these family favourites straight from Chef Beryl’s kitchen, her much-loved Minced Beef Stroganoff recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.


Chef Beryl’s Minced Beef Stroganoff

Ingredients

  • 1.5kg Beef mince
  • 1 x 420g can kidney beans
  • 1 x 420g can kidney beans
  • 1 onion
  • 500g mixed vegetable
  • ½ cup mushroom
  • 1 x 420g tomato puree
  • 2 cups beef stock
  • 1½ Tbs gravy powder
  • 150ml light sour cream
  • 3 cups whole meal pasta

Method

  1. Cooking instructions blend gravy powder with stock
  2. Puree kidney beans with tomato puree
  3. Boil pasta on stove for 20min or until pasta is soft
  4. Combine all the ingredients (except pasta and sour cream) and bring to boil.
  5. Turn heat down and simmer gently for 30minutes.
  6. Drain pasta and add to mince along with sour cream
  7. Place into an oven dish to serve.
