Today, we’re sharing one of these family favourites straight from Chef Shenali’s kitchen, their much-loved Beef and Black Bean Burritos recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Shenali’s Beef and Black Bean Burritos
Ingredients
- 120ml oil
- 6 kg beef, minced
- 4 large diced onions
- 2 tbsp garlic
- 1 kg grated carrots
- 1kg grated zucchini
- 5 tins of black beans
- 30 g paprika
- 40 g cumin powder
- 2 tsp chilli powder
- 2 tins of tomatoes
- 3 tbsp beef stock powder
- 1 bag cheese grated
- 2 lettuces
- 2 tubs of sour cream
- salt to taste
- 9 packets of whole meal wraps
Method
- Heat oil in a large frying pan over medium heat. Cook onion and garlic for 5 minutes until softened. Add beef carrot, tomatoes and zucchini and cook for 5 minutes, stirring to break up lumps. Add Black Beans, paprika, cumin, chilli, beef stock powder and 3/4 cup water, and stir. Cook for 3 minutes or until thickened.
- For toasted tortillas , heat a non-stick frying pan over a medium heat and brown each tortilla for 10 seconds on one side only. Wrap in a tea towel until ready to serve.
- Build your own burrito with lettuce, beef and bean mixture, cheese, and sour cream.
