Today, we’re sharing one of these family favourites straight from Chef Larissa’s kitchen, their much-loved Tuscany Lamb with Potato and Sweet Potato Mash recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Larissa’s Tuscany Lamb with Potato and Sweet Potato Mash
Ingredients
- 8kg minced lamb
- 2 cups diced onion
- 2 red capsicum
- 300 grams spinach
- 300 grams mushroom
- 4 litre vegetable stock
- Tomato puree
- 1kg carrots
- 1kg zucchini
- 8 tbls Italian herbs
- 1kg broccoli
- 2 tbls garlic
- soy milk
- margarine
- 10kg peeled potatoes
- 5kg sweet potato
Method
- Fry onions garlic and herbs and lamb. Add in stock and tomato puree, lower heat and add in all the vegetables and lentils. Simmer until cooked.
- Cook potatoes, when cooked add in margarine and soy milk, mash together until smooth.
