Gisborne’s Favourite Meal: Lamb Hot Pot with Saltbush Sweet Potato Mash

Today, we’re sharing one of these family favourites straight from Chef Deonne’s kitchen, their much-loved Lamb Hot Pot with Saltbush Sweet Potato Mash recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.


Chef Deonne’s Lamb Hot Pot with Saltbush Sweet Potato Mash

Ingredients

  • 500g of Lamb mince
  • 1/2 cup diced onion
  • 1/2 red capsicum
  • 100g spinach
  • 100g mushrooms
  • 1l vegetable stock
  • tomato puree
  • 500g peeled potato
  • 500g peeled sweet potato
  • 2 carrots
  • 2 zucchinis
  • 2 cup broccoli
  • 1 tsp garlic
  • 2 tbls Italian herbs
  • 2 tsp saltbush
  • soy milk
  • Margerine

Method

  1. Fry onions, garlic, herbs and lamb in a pot and meat has browned.
  2. Add in tomato puree and stock lowering the heat until simmer appears.
  3. Add in all vegetables and continue cooking until vegetables are slightly soft.
  4. Cook potato and sweet potato in separate pot until soft. Add soy milk and Margerine and mash until smooth.
  5. Serve Lamb hot pot with mash.
