Today, we’re sharing one of these family favourites straight from Chef Holly’s kitchen, her much-loved Pumpkin Focaccia recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Holly’s Pumpkin Focaccia
Ingredients
- 500gm plain flour
- 1 teaspoon dried yeast
- 2 teaspoons salt
- 6 tablespoons vegetable oil
- 1 cup cooked and mashed pumpkin
- 1/4 cup lukewarm water
- Toppings that you like I used garlic, oregano and cheese
Method
- Mix water and yeast in a bowl leave to foam about 5 minutes
- Add pumpkin and oil mix we’ll
- Mix flour and salt and add to wet ingredients
- Kneed together
- Leave in a covered bowl to double in size about 1 hour in a warm room
- Kneed again
- Place in a baking dish and press down to about 2 inches
- Let rest again for 20min
- Top with your preferred toppings and bake in a pre-heated oven at 210 degrees Celsius until golden brown, about 20 minutes
- Remove from oven to cool and enjoy
