Today, we’re sharing one of these family favourites straight from Chef Jaskaran and Manpreet’s kitchen, her much-loved Tomato & Corn Soup recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Jaskaran and Manpreet’s Tomato & Corn Soup
Ingredients
- 2 tablespoons olive oil or butter
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 ripe tomatoes (or 1 can of diced tomatoes)
- 1 cup sweet corn (fresh, frozen, or canned)
- 3 cups vegetable broth
- Salt and pepper to taste
- Optional: a spoon of cream or a few basil leaves for garnish
Method
- Heat oil in a pot and sauté the onion until soft.
- Add garlic and stir for a minute.
- Add tomatoes and cook until soft and juicy.
- Mix in the corn and broth. Let it simmer for 10–15 minutes.
- Blend if you prefer a smooth texture, or leave it chunky for a rustic feel.
- Season to taste and serve warm with bread or crackers.
