Today, we’re sharing one of these family favourites straight from Chef Jessie’s kitchen, her much-loved Chicken Pot Pie recipe. Packed with nutrients and hidden veg, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.
Chef Jessie’s Chicken Pot Pie
Ingredients
- 600g diced chicken breast
- 4 garlic cloves
- 1 small, diced onion
- 1 large, diced carrot
- 2 diced celery sticks
- 1 cup frozen peas
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 cups milk
- 1 cup reduced salt chicken stock
- 1/3 cup Maggi gravy powder
- 4 sheets defrosted light puff pastry
Method
- Preheat oven to 180 degrees
- Add 2 tbsp olive oil to a crockpot on the stove over medium heat. Brown off diced chicken until ¾ cooked. Remove chicken and set aside.
- Add garlic and diced onion to the pot, sauté until onion is translucent. Add carrot & celery and continue cooking over medium heat until vegetables are tender.
- Re-add the chicken, dried herbs, milk, and chicken stock to the pot, and bring to a boil before placing a lid on the pot and transferring it to the oven.
- Set a timer and leave to cook for 45 mins. Using a cookie cutter, cut puff pastry and place on lined baking trays. Place baking trays into the oven with the remaining 7 mins of pie mixture cooking time.
- Pull the mixture out and thicken with gravy.
