Windsor’s Favourite Meal: Spaghetti Bolognaise

At Story House Early Learning, mealtimes are more than just food on a plate; they’re moments of comfort, discovery, and full tummies. Behind the scenes at our Windsor centre, our talented chef Alyssa Schwerin has been serving up nutritious, delicious meals with heart for over three years.

With a deep passion for creating child-friendly meals packed with goodness, Alyssa has perfected dishes that our little learners genuinely look forward to. Curious what’s on the menu? Here are four of the all-time favourites across our rooms:

Today, we’re sharing one of these family favourites straight from Alyssa’s kitchen — her much-loved Spaghetti Bolognaise recipe. Packed with hidden veggies and lentils for an extra dose of nutrition, this one’s a hit at lunchtime and perfect for the whole family to recreate at home.


Chef Alyssa’s Spaghetti Bolognaise

Ingredients

  • 500g spaghetti
  • 1 tablespoon olive oil
  • 500g beef mince
  • 1 brown onion, diced
  • 1 tin brown lentils, drained and rinsed
  • 2 garlic cloves, minced
  • 1 zucchini, grated
  • 1 carrot, grated
  • 140g tomato paste
  • 400g tin chopped tomatoes
  • 700g tomato puree
  • 1 beef stock cube
  • Salt and pepper to taste
  • Grated parmesan or cheddar to serve

Method

  1. Cook the spaghetti according to packet instructions. Drain and set aside.
  2. In a large frying pan, heat olive oil over high heat. Add the beef mince, breaking it up with a spatula, and cook for around 5 minutes until browned.
  3. Add the onion and lentils, stirring until the onion is soft and translucent. Add garlic and cook for another minute.
  4. Stir in the chopped tomatoes, tomato paste, and tomato puree, then crumble in the stock cube.
  5. Add the grated carrot and zucchini, mix well, and bring everything to a gentle boil.
  6. Turn the heat to medium and simmer for 20 minutes, stirring occasionally.
  7. Serve the bolognese sauce over the cooked spaghetti and top with your choice of grated cheese — or pop a bowl on the table and let everyone help themselves!
