Chef Michael’s Special Occasion Chocolate Chip Cookies
Ingredients:
- Plain flour 2¼ cups (280 g)
- Baking soda (bicarb) 1 tsp
- Cornflour 1½ tsp
- Unsalted butter, melted 170 g
- Brown sugar 150 g
- Caster sugar 100 g
- Egg 1 whole large egg
- Vanilla extract 1 tsp
- Chocolate chips 1 cup (approx. 170 g)
Method:
Melt butter and allow it to cool slightly.
Whisk the melted butter, brown sugar and caster sugar together.
Add the whole egg and vanilla. Mix until combined.
Fold in the flour, baking soda and cornflour.
Stir through the chocolate chips.
Chill the dough for 30 minutes if it’s too soft.
Scoop into approximately 27 cookies and place on lined baking trays.
Bake at 160°C fan-forced for approximately 10–12 minutes, until the edges are golden.
Cool on the tray for 5–10 minutes before moving.
Little baking tip: For soft, chewy centres, don’t wait until the entire cookie looks golden. The centres should still look slightly soft when you take them out!
