One of the children’s favourites is Chef Lisa’s delicious Butter Chicken, served with fresh naan bread, steamed rice and green vegetables. Warm, comforting and full of flavour, it’s a much-loved mealtime favourite that keeps little tummies happy while providing a nourishing and balanced meal.

Chef Lisa’s Butter Chicken
Ingredients:
- 600 grams of Chicken Thigh – skin off
- 1 medium brown onion
- 2cm knob of fresh ginger
- 2 cloves of garlic
- 1 tsp of cinnamon
- 2 tsp of paprika
- 2 tsp garam masala
- 1/2 tsp chilli powder (optional)
- 200mls Passata or Crushed Tomatoes
- 125 mls Chicken Stock
- 100 mls cream or coconut cream
- 1/2 cup greek yoghurt
- 2 tbs cornflour
- 20 grams butter
- 1 bunch coriander – with roots
- soy sauce or fish sauce to taste
Method –
Cut chicken into 2cm dice & marinate with spices
Brown Chicken in a frypan with a little bit of butter or oil
Wash and chop coriander roots and blend to a paste with onion, garlic and ginger
In a medium saucepan fry paste in butter, add chicken, passata and stock, bring to the boil, stirring occasionally. Let simmer for 30 minutes or until the chicken breaks apart.
Combine cream, yoghurt and cornflour in a small bowl and stir to remove all lumps.
Add cream mixture to the pot and stir through – season with soy sauce or fish sauce to taste and serve with steamed rice, green vegetables and fresh coriander.
